Breakfast Cookies

My husband and I enjoy camping and hiking. We went on a fantastic hike this past
weekend to Lawyer Stephens Cave. James Stephens was a great abolitionist who, during the 18th century,

worked to abolish slavery in St. Kitts and throughout the Caribbean.  During the 11 years he did this, he lived in a cave in the rainforest so it could not be said that he was affiliated with the rich or the government.
I wanted to take something with us in case we got hungry on our trek.  Whatever we took needed to be lightweight, not spillable, and not bulky.  So, I came up with the idea of making breakfast cookies.
These cookies are full of good for you things like currants, oats, and peanut butter.  They gave us the energy we needed for our long hike.  Even if you're not into hiking these are great for busy mornings when you just need to grab something and go.  I hope you'll give them a try!
